Aged raw tuna
当店の熟成マグロとは、マグロの中でも黒いダイアと称される本マグロ(クロマグロ)の旨みを最大級に引き出す乾燥熟成をしております。 At our restaurant, “aged tuna” means premium bluefin tuna (hon-maguro), known as the “black diamond” of tuna, that we dry-age to draw out its umami to the fullest.
